Think elderberry syrup is only for winter immune boosting? Stand back, because turns out we need to add summer-loving recipes to our immune system arsenal! I always stash a few of jars of elderberry away when I make a big batch. Then it is easy to boost up the goodness of our kefir, lemonade, and popsicle game throughout the entire year. Why elderberry?
Elderberries are loaded with vitamins and antioxidants and have shown effectiveness in supporting a healthy immune system. Some studies have shown their ability to lessen flu and cold symptoms as well.
And lemons, too? Well – just double down on that antioxidant support, add some huge Vitamin C benefits and systemic support for the entire body. Plus, who doesn’t love freshly squeezed lemonade?

The bonus of this recipe is that it makes a huge pitcher of lemonade, but also can be doubled as a popsicle recipe as well. Elderberry Lemonade & popsicles
Ingredients
- 1½ cups freshly squeezed lemon juice (remove all seeds)
- 1 cup coconut sugar
- ¼ cup local, raw honey
- 1 tablespoon vanilla
- ¼-½ cup elderberry syrup (to taste)
- 7-8 cups water
Instructions
- Squeeze lemons into large measuring cup and remove seeds. On the stovetop, combine 1 cup of water, the sugar and honey on low heat. Stir until sugar is completely dissolved. Add the elderberry and vanilla to the lemon juice. Pour sugar combination into mixture and continue to stir. Add remaining water. Serve over ice, garnish with mint if desired.
- For popsicles, pour prepared lemonade into silicone molds. Freeze for an hour before removing and enjoying!
