It is the perfect addition to so many meals, or is substantial enough to eat alone for a light lunch. I imagine it could be edited with many things … roasted pine nuts, bits of salami, even a squeeze of orange … YUM. My mouth is watering again
Marinated Butter beans
- 1 bag dried butter beans soaked & prepped **or** 3-4 cans of butter beans rinsed & strained
- Juice of 3 lemons
- 4-8 cloves garlic, minced
- bunch of Italian parsley, chopped coarsely
- 3 tablespoons olive oil
- 2 tablespoons fresh tarragon, minced
- pinch sea salt
- pinch black pepper
- Optional – diced red onion
- combine all ingredients together and allow to marinate for at least a couple hours. Store in refrigerator. Serve at room temperature
