Friends of ours own a local brewery, and we love to head over and sit out on the patio to enjoy the latest brew along with whatever goodies the kitchen has dreamed up. One evening this lovely concoction was placed on our order. Heaven in the first bite!

Lucky me, another friend had just recently shared a gorgeous bunch of Italian parsley from her garden with me. Let the recipe-mimicking begin!!

With tons of garlic, lemon, parsley, red onion and olive oil, this recipe bursts with fresh flavors. Create a one of a kind charcuterie board with these marinated butter beans, crunchy fermented carrots, crisp sourdough crackers, good olives and cheeses….so many good things.

You can use either dry or ready-to-eat butter beans. Thrive Market carries these great organic butter beans that are ready to eat. It’s perfect for those times when you don’t plan ahead enough to use the dry beans!

It is the perfect addition to so many meals, or is substantial enough to eat alone for a light lunch. I imagine it could be edited with many things … roasted pine nuts, bits of salami, even a squeeze of orange … YUM. My mouth is watering again

  • 1 bag dried butter beans soaked & prepped **or** 3-4 cans of butter beans rinsed & strained
  • Juice of 3 lemons
  • 4-8 cloves garlic, minced
  • bunch of Italian parsley, chopped coarsely
  • 3 tablespoons olive oil
  • 2 tablespoons fresh tarragon, minced
  • pinch sea salt
  • pinch black pepper
  • Optional – diced red onion


  • combine all ingredients together and allow to marinate for at least a couple hours. Store in refrigerator. Serve at room temperature
