Add citrus, herbs, spices, etc to glass jar. Fill jar with white vinegar. Cover and store 1-2 weeks. Infusing evergreen takes a bit longer. Some recommend storing in a dark place. I keep my jars out on the counter in the kitchen, but they aren’t sitting in direct sunlight.
Strain out the peels & etc when ready to use.
Bonus #protip: Throw the vinegar soaked peels in the garbage disposal & run to clean and freshen it
